“Kokonte” or “Amala” also called “Brown fufu” is made from dried cassava or yam (Genus Dioscorea). It grows in Africa, Asia, the Caribbean, Oceania, and Latin America. It is processed into flour that can be reconstituted into Amala or Kokonte by boiling water, adding the flour, and continuously stir till the desired paste or gel format is achieved. It is very delicious with various popular West African Sauces. Be it Egusi,vegetable, groundnut, okro etc. It’s rich in starch and fiber.
